I can’t believe it has been three weeks since we welcomed our little bundle of joy into the world. She truly is a joy and a blessing to be around. For the past three weeks, we have had lots of family and friends over to visit Miss Olivia. I want to thank all of them for the meals, goodies and countless help around the house.

That is why you haven’t seen many posts about actual meals because our refrigerator is stocked with amazing food at the moment.

Cookie Dough Bites

I can’t express how grateful I am for all the help my husband has been to me. When I am tired of the LATE night feedings, he is always ready to pitch in and get her to bed if she is fussy. (Which has been a lot lately!)

Yesterday I decided to make some cookie dough bites and hand them out to everyone who has helped me out, especially my co-workers. The best thing about these delectable treats is that they were easy to make and super fun to eat while making them since they have no eggs in the dough.

I covered a few of the balls all the way with the chocolate but decided I personally liked them better when they were only dipped halfway. It’s completely up to you on how you want to make and devour them.

Cookie Dough Bites

Yield: 34 balls
Prep Time: 15 minutes
Cook Time: 1 hour
Additional Time: 20 minutes
Total Time: 1 hour 35 minutes

Ingredients

  • 2 sticks unsalted butter
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 4 Tbsp milk
  • 1 Tbsp vanilla
  • 2 1/4 cup flour
  • 1/2 tsp salt
  • 1 1/2 cups semi sweet chocolate chips
  • 1 lb. chocolate coating

Instructions

In a mixing bowl whisk the butter and sugars until creamy.

Remove the whisk attachment and replace with the paddle.

Slowly add in the milk and vanilla.

Then add the flour and salt a little bit at a time.

Stir in the chocolate chips with a wooden spoon.

Lay a piece of wax paper on a cookie sheet.

Using a spoon or cookie scoop make little balls and lay next to one another on sheet.

Place in refrigerator for at least 1 hour.

Place the chocolate coating in the microwave and follow the package instructions on melting.

Remove the balls from the refrigerator and dip them one at a time into the melted chocolate and place back on wax paper.

(I liked the cookie dough balls better when they were only dipped halfway in the chocolate)

Top with peppermint, sprinkles or any other topping you would like.

Store in refrigerator.
