Chorizo Con Queso

You can never go wrong with queso.  I mean it’s loaded with cheese, tomatoes, spice and chorizo with a big heaping side of lightly salted tortilla chips.  Yep, it’s basically my happy place.  I almost think I could go eat a restaurant and just have the chips and queso as my meal.
Don’t judge.
A while back I decided to make my own cheesy goodness at home so I could eat it whenever I wanted.  Chorizo con queso was born in my slow cooker almost 3 years ago.  I decided to remake the recipe and spend a little more time on the photos.  Plus it meant that I got to have queso again and I would never turn that down.

Chorizo Con Queso

Ingredients:

1 pound ground chorizo
1 pound velveeta cheese
1 can rotel tomatoes with green chilies, drained
1/4 cup light sour cream
2 garlic cloves, finely chopped
1 cup finely chopped onion
1 jalapeno, seeded and finely chopped
1/4 cup milk
cilantro as garnish

Directions:

In medium saucepan cook the chorizo and onions until meat is browned.

In slow cooker on high heat add cheese, rotel tomatoes, garlic, jalapeño and chorizo.  Stir the mixture and let it sit for 8 minutes.

Stir in the milk and sour cream and let it cook for 20 minutes or until cheese has melted.

Serve and garnish with cilantro.
