Don’t you just love casserole dishes.  You have a delicious meal that is available at your need for several days!
If you haven’t noticed ~ I am highly obsessed with Jennie-o Turkey!  A healthy alternative and they have so many different varieties.  Shaun and I fell in love with the taco seasoned ground turkey.  If you don’t normally cook with ground turkey visit the Jennie-O website for some tasty recipes.  Also, I have started to add Weight Watcher Points at the bottom of most of my recipes.
This dish is perfect for dinner or breakfast.  ENJOY!

Chile Rellenos Turkey Casserole

Ingredients:

1.25 lbs Jennie-o Lean Taco Seasoned Ground Turkey
1/2 cup onions, chopped
1/2 tsp salt
1 cup cheddar cheese, shredded (reserve 1/2 cup)
8 oz. green chilies
5 eggs
1 1/2 cups 1% milk
3 Tbsp flour
1/3 tsp salt
1 10oz. can Rotel tomatoes with green chilies

Directions:

Preheat oven to 350 degrees
Brown the turkey in sauce pan and then drain
Add onions and salt
Saute the onions with meat until onions are soft
Spread out the meat and onion mixture into a 9in. casserole dish
Add the green chilies and then sprinkle 1/2 cup of cheese
In small bowl combine eggs, milk, flour and 1/3 tsp salt
Beat and then pour on top
Bake for 35 minutes
In last 10 minutes add the rest of the cheese
Before you serve add the rotel tomatoes
