I’m starting 2017 on a good note with this easy, healthy Chickpea Salad. It’s a combination of some of my favorite vegetables tossed into a bowl and then drizzled with a little bit of olive oil. This salad can be enjoyed as the main meal or complement your main entree.

This salad is perfect for potluck dinners, picnics, lunch on the go or just a simple, yet satisfying lunch in the comfort of your own home. After a quick yoga workout on the Wii, you can find me sitting on the couch eating this Chickpea Salad while watching The Crown. Shhh.. Don’t let the kids know that I actually allow myself to eat on the couch when they are off to school.

Now feel free to incorporate your own favorite vegetables for this salad. You can even substitute the feta cheese with broken up goat cheese crumbles. Take out the olive oil and top it off with your favorite Greek dressing or vinaigrette. This chickpea salad does have a strong onion flavor with the addition of the red onion, so if your kids or other adults you know have a dislike for onion just omit. Now here’s to a happy and healthy 2017 to all of you.

Chickpea Salad

Chickpea Salad

Yield: 4-6 servings
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 1 19 ounce can chickpeas, drained and rinsed
  • 1/2 cup diced red onion
  • 3/4 cup sliced cherub tomatoes
  • 1/2 cup diced orange bell pepper
  • 1/2 cup diced cucumber
  • 1/2 cup feta crumbles
  • 2 teaspoons finely chopped dill
  • 1 tablespoon extra virgin olive oil

Instructions

Drain and rinse the chickpeas. Lay them out to dry on some paper towels. Remove the outer skin from each one and then place them in a bowl.

Add the rest of the ingredients and stir. Serve right away or store in air tight container in refrigerator.
