Chicken Tortilla Soup

It was over 3 years ago that I started A Zesty Bite. There are so many family favorites that I decided to bring back this chicken tortilla soup and update some really awful photos. It’s funny how a good camera can make the recipe look entirely different from when you first made the recipe. I mean its almost embarrassing to look back at my old photos but I have left them up along with the recipes. By no means are they bad recipes its just the photo doesn’t make it quite as appetizing.

Do photos change how you view or make your food choices? We live in such a visual world that I know I like to see pretty pictures. I’ll totally admit that I sometimes judge a book by its cover.

This year I hope to bring back some family favorites as well as introduce you to some that I’ve never blogged about on the website. Just good ole’ easy comfort food that totally feeds your soul. I will also try to experiment with new foods and flavors.

What is the one type of food that you would like to see more of on this blog? Is it savory, sweet, healthy, desserts, beverages, casseroles, crockpot or just good family recipes?

Chicken Tortilla Soup

Ingredients

  • 1 Tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 4 ounce can of green chilies
  • 3 Tablespoons chopped fresh cilantro
  • 1 28 ounce can whole tomatoes, diced and drained
  • 6 cups chicken broth
  • 1/2 teaspoon ground cumin
  • 1 teaspoon sugar
  • juice from 1/2 lime
  • salt and pepper to taste
  • 2 cups cooked diced chicken (I used rotisserie)

Instructions

On low heat add the oil and sauté the onions. Cook for 8 minutes and then add garlic. Move to high heat and add green chilies, cilantro, tomatoes, broth, cumin, sugar, and lime juice. Bring to a boil and then reduce heat to a simmer for 45 minutes.

Add the cooked chicken and cook for an additional 15 minutes. Top with tortilla chips, cilantro and cheese.
