It’s so hard to talk about the great things in my life when so many families are dealing with hardships in Oklahoma. I’m a total sap when I hear a touching story or see a sad picture. Now that I have my own child these stories move me even more. I look around and see my beautiful house standing along with the others in our subdivision. Our dogs are running around the yard and house without a care in the world. Olivia is rolling all over the floor and my husband and I are relaxing with a beer in our hands on our back porch. These are the simple moments in life that can instantly be torn from any one of us with out notice.

I know that WE WANT to help out any way that we can and many others do too. Ree wrote several ways of helping out on her blog yesterday and I highly suggest taking some time to see how you can help donate to families in need.

With all of these storms popping up lately it definitely makes you take a step back and realize just how IMPORTANT family time really is. It’s not the materialistic things in life that makes us happy but LIFE itself.

These chicken pesto sandwiches are perfect for Summer and getting your family together to spend time in the backyard.

Chicken Pesto Sandwich

Chicken Pesto Sandwich

Chicken Pesto Sandwich

Yield: 2 sandwiches
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Grilled chicken topped with bacon, cheese and of course pesto then smashed between a pretzel bun.

Ingredients

  • 1 large chicken breast, sliced in half
  • salt and pepper
  • 2 pretzel buns
  • 4 slices of baked bacon
  • 2 slices Colby-Pepper Jack Cheese
  • 2 tsp basil pesto
  • 2 slices tomato

Instructions

Preheat the grill.
Sprinkle both sides of the chicken breasts with salt and pepper.
Place on the grill and cook until done (about 15-20 minutes)
When chicken is almost done place the pretzel buns face down onto the grill to toast.
Remove the buns and slather the top portion with the basil pesto.
Build the sandwich with bun, chicken, bacon, cheese, tomato, pesto and top bun.
