Chicken Bryan Texas
Ingredients:
6 lg chicken breasts
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
6 oz goat cheese
2 Tbsp butter
1 Tbsp garlic, chopped finely
1 Tbsp yellow onion, chopped
1/2 cup dry red wine
1/4 cup lemon juice
8 Tbsp unsalted butter
1 cup sun dried tomatoes, sliced
1/4 cup chopped basil
1/2 tsp salt
1/2 tsp black pepperDirections:
Rub the olive oil, pepper, and salt on both sides of chicken breasts
Place chicken in a large sauce pan on medium heat to cook
Depending on the size of the chicken it could take anywhere from 25-35 minutes
Make sure its not pink and cooked all the way through
In the last few minutes of cooking add an oz of goat cheese to each piece
In medium sauce pan place the butter and onions on medium heat and cook for about 5 minutes and then add garlic, red wine, and lemon juice
Increase the heat just a little bit and simmer the sauce
After 4-5 minutes add butter one Tbsp at a time; stir until melted
Now add sun dried tomatoes, basil, salt and pepper and stir
When plating add the chicken and the top with the sauce and sun dried tomatoes

Wonderfully flavorful chicken dish. However,I would have to probably replace the goat cheese with another type of cheese.I recall trying goat cheese for the first time in the mid 70′s and not caring for the stuff. In spite of my numerous attempts over the years,trying to acquire a taste for the stuff, it still remains the only cheese I still don’t like. I’m probably one of the few on this planet that is not a fan of this popular and well loved food trend.
