As we speak I am officially on family vacation. Throughout the year I am usually found traveling by myself, with other food blogger friends or with my husband. This go around we decided to bring the little one since we would be visiting the beach and she has never been. Living in Houston a year ago we frequented the coast many times but since the move I or we have been dying for the chance to get a little humidity in our bones.

 

I mean come on don’t you just love walking outside feeling all sticky while the wind is casually blowing sand all over your face.

 

Yes, I really do love it. Call me crazy but I actually miss the humidity that the coast brings with it. That’s why I am having a blast looking outside my hotel window at the waves crashing in and knowing that I’m less than a 5-minute walk to sinking my toes in the water.

Chicken, broccoli and cheddar potato waffles

Right before we left for vacation I made these addicting and quite satisfying chicken, broccoli and cheddar waffles. For a while I’ve been dreaming about the classic casserole dish but decided to take a different approach to the recipe. Why not make it into a waffle batter recipe without the rice?

 

It’s easy, it’s delicious and it could be your next meal. In fact I think it should be made for dinner very, very soon. The whole family will thank you or you could just save it for yourself.

Chicken, broccoli and cheddar potato waffles

Chicken, broccoli and cheddar potato waffles

Yield: 6 waffles
Prep Time: 40 minutes
Cook Time: 5 minutes
Total Time: 45 minutes

Ingredients

  • 5 yukon gold potatoes
  • 1/3 cup 2% milk
  • 3 tablespoons unsalted butter
  • 1 1/3 cup chopped rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1 1/3 cup finely chopped boiled broccoli
  • 1/2 teaspoon table salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 cup all purpose flour
  • 1 large egg

Instructions

  • Boil the potatoes until tender about 30 minutes. Drain and place them in a large bowl.  Mash them and then add milk and butter.  Mix until well incorporated.
  • Stir in the chicken, cheese, broccoli, salt, pepper, flour and egg.
  • Turn on a waffle iron to medium/high heat.  Spray with non-stick spray if need be.  Pour in 1/3 cup batter and cook until slightly brown.
