Dough
In large mixing bowl add the flour and make a well in the middle
Add the eggs to the center and mix with the dough hook
After the eggs are mixed in well remove the dough and place on floured surface
Knead the dough for about 10 minutes or until smooth and elastic
Cover with saran wrap for at least 30 minutes
**If dough is too sticky add more flour in small increments**
Cheese
In small bowl add the package of cheese along with the cream cheese
Mix with a spatula or wooden spoon and set aside
Preparing the Ravioli
Cut off a small section of the dough and place through the flat runner of the noodle maker
Make sure that there is plenty of extra flour on the dough so that it doesn’t stick while going through the machine
Keep running it through until you reach a level 4-5 on your kitchen aid mixer
Lay the dough out flat and cut with a knife, pastry roller, or ravioli cutter to make squares
Place a small amount of the cheese mixture into the center of one square
Place egg wash all around the edges and top with another pasta square and roll with pastry cutter or punch it with the ravioli cutter
Make sure that all air is out of the center of the ravioli
In medium size pot add water and salt and bring to a boil
Add some of the ravioli and cook until tender — cooking time will differ depending on thickness of dough — mine took about 15 minutes
Serve on top of the marinara sauce
