If you are ever looking for a tasty alternative to french fries look no more.  Butternut squash does the trick and they are EXCELLENT!  My sister made these for her kids and they had no idea that they were eating squash.  I paired them tonight with a steak but they go great with hamburgers.  If this is your first time cutting up butternut squash beware, it takes time to cut the whole thing up, but it is well worth it!  ENJOY!

Butternut Squash Fries

Ingredients:
1 whole butternut squash
2 Tbsp. olive oil
Sea Salt or regular salt to taste

Preparation:
With a very sharp knife cut away the outer layer of the butternut squash
Cut in half length ways and then cut that piece in half
Start to cut in french fry shapes
Preheat oven to 425
Lay the fries on a baking sheet
Drizzle the olive oil over the fries and sprinkle with salt
Bake for 35-40 minutes and turn fries over half way through the baking
Last 2 minutes you can broil the fries to make them a little browner
Serve with ketchup

    This looks great, I love butternut squash. Do they get really crispy? That is always my issue with baked sweet potato fries, they are never crisp enough.

    Putting the broiler on in the last few minutes definitely helps them crisp up a little better. They still don’t get as crispy as regular potatoes but are still very tasty.
