Most of you noticed that I threw one stellar of a grilled cheese party this past week. I contemplated on sharing my grilled cheese recipe for all of you but decided why the heck not. Since my new found love for brie I wanted to keep this recipe simple and quick since I was going to be eating it for lunch for photographs.
Yes, I totally made a sandwich before the party just so I could take good photos instead of making my guests wait it out. What, you know you would do that too.
Now back to this ooey gooey Brie Bacon Pesto Grilled Cheese Sandwich. This recipe is for one because I had to eat alone that day and so there was no need to share or make more. If you would have been there I would have grilled you up your own sandwich.
The brie in this sandwich is totally awesome and it can not be omitted. If you don’t like brie I highly suggest you give it another shot like I did. If you don’t like it still…… well I’m not sure what to tell you. Just kidding but not really.

Brie Bacon Pesto Grilled Cheese Sandwich
Yield: 1 sandwich
2 slices jalapeño cheese bread (any bread will work)
2 slices baked bacon
1/2 teaspoon pesto
1.5 ounce brie
1 teaspoon butter
Heat a large nonstick skillet with butter.
Spread the pesto onto one slice of the bread and place it down in the skillet with pesto facing upwards. Top with bacon and brie chunks. Top with other slice of bread.
After 1-2 minutes flip the sandwich over and let it cook for an additional 2 minutes.
