Summertime is approaching at a fast pace and I’ve got cool quick treats on my mind. Who am I kidding…. sweets are my middle name. I could go for a warm homemade gooey chocolate chip cookie or a big bowl of vanilla ice cream topped with hot fudge, caramel and don’t forget the sprinkles. Now I love fruit and desserts but I don’t really like them paired together. Thats right I don’t like fruity muffins, fruity cookies, fruity pies, fruity cake and lastly fruity ice cream. I can manage to stomach it but I just don’t prefer it.

It’s plain jane for me and my desserts!

Today I’m breaking my own mold and stepping into the world of fruity ice cream with these berry ice cream bars. I used my favorite berries in this recipe which include strawberries, blueberries and raspberries. I’m feeling kind of guilty that I left out blackberries so feel free to include them in the mix as well.

These berry ice cream bars are the perfect way to get your kid or loved one to eat fruit! We don’t have that problem in our household besides ME not liking to combine the two. I prefer to eat these babies with a spoon on a plate but Olivia liked to eat them with her hands. You can also wrap the bottoms with parchment paper for easy handling so your fingers don’t get frigid.

Prep Time: 5 minutes
Cook Time: 8 minutes
Additional Time: 3 hours
Total Time: 3 hours 13 minutes

Ingredients

  • 1/2 gallon vanilla ice cream
  • 1/3 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup sliced strawberries
  • extra fruit for topping

Instructions

Remove ice cream from freezer and set on the counter to soften.

Add fruit to a small pot over medium heat.  Cook for 6-8 minutes stirring occasionally.  Place berries into a large mixing bowl and top with the softened ice cream.  Beat in the mixing bowl with the paddle attachment for 3-4 minutes or until ice cream is well blended with fruit.

Pour the ice cream into one 9X13 casserole dish and a noah casserole dish.  Both lined with parchment paper.  Add additional whole raspberries and blueberries to the ice cream and push down using your finger.  Cover with saran wrap and place in freezer for at least 3 hours before serving.

Slice into bar sizes and eat with fingers or wrap bar in parchment paper for easy eating.
