DQ…. That’s what I like about Texas. Growing up, I remember riding my bike and meeting my friends at Dairy Queen for an ice cream blizzard. Chocolate chip cookie dough, crushed butterfingers, crushed peanut butter cups and caramel turtle blizzards are my favorite. I love the way they flip them upside down to ensure you get the best ice cream cup ever.

Another DQ favorite of mine is their steak finger basket packed with delicious steak fingers, Texas toast, fries, and white gravy, followed by a big tall drink to wash it all down. We were traveling the other weekend throughout Texas and stopped at a DQ, and while we were there, I expressed to my husband about making a baked version of steak fingers. His immediate reaction to most of my meals and recipes was, ” I don’t know if that’s going to work.”

Much to his dismay, I made it work, and we had it for dinner this week. A couple of years ago, I had made baked chicken drumsticks with a crispy outer coating, and I was destined to do the same with this crust. When you work with fried batter, it’s easy to handle and you can jerk the food around but with these steak fingers, you have to handle delicately to ensure the batter stays on.

So the next time your family is craving some good homemade steak fingers, go for the baked version instead of the fried.

Baked steak fingers

Yield: 3 servings
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

  • 2 ounce packet Kraft parmesan seasoning blend
  • 1/4 cup cornmeal
  • 3/4 cup flour
  • 1/8 teaspoon ancho chile powder
  • 1/2 teaspoon salt, plus extra for seasoning
  • 1 cup whole milk
  • 2 pounds beef steak fingers

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large shallow dish combine seasoning blend, cornmeal, flour, chile powder and salt.  Mix well to make sure it is well combined.
  3. Place a couple of steak fingers at a time in a bowl filled with milk.  Then place them in dry mixture and flip meat over to make sure all sides are coated.  Lay on a baking sheet covered with non-stick foil.  Repeat until all meat is done.
  4. Cook for 15 minutes and then flip over the steak fingers.  Bake for an additional 10 minutes or until done.
  5. Remove from oven and lightly season with salt.
