Distractions. I am so easily distracted by little things that sometimes I miss the bigger picture in life. As I’m writing this post, I caught myself reading aimlessly over my Facebook feed. Updating constantly to see what was new with my friends. After Facebook, I hit up Pinterest to see if anything was worth pinning. The tabs keep getting toggled between Facebook, Pinterest, Facebook, Pinterest… all while I’m trying to write a baked pita chicken post.
 
I finally had to “X” out of the 5+ tabs on my Mac so that I could concentrate on my writing.
 
The other night we were all in the living room watching TV, and my husband set down to play with Olivia. Once again, I was distracted by her vying for our attention because I was on Instagram. Guilty phone pleasures. My husband took my phone away and placed it out of sight. I was furious because I felt like I was in junior high, and someone just took my phone away. In the bigger scheme of things, I was being distracted by MY DAUGHTER.

I will be the first to admit that it’s super hard to put the phone away, especially when my job relies so heavily on social media.

 
Will I miss a tweet?
 
Will I reply too late to an email?
 
Will I miss something on Facebook?
 
But what I’m truly missing out on in life is spending quality time with my family. I say that they are most important to me, but I don’t treat them that way. Will this be an overnight fix? Heck no, but I’m hoping that I will improve slowly.
 
This is an old recipe that I resurfaced because I wanted to make an easy recipe to spend more time with my family and the old photo was just horrendous.

Baked Pita Chicken

Baked Pita Chicken

Yield: 3-4 servings
Prep Time: 10 minutes
Cook Time: 16 minutes
Total Time: 26 minutes

Ingredients

  • 1 6 3/4 ounce bag of Stacy’s perfectly thymed pita crisps
  • 1 Tablespoon Italian seasoning
  • 1/4 teaspoon salt, plus more for chicken
  • 1/2 teaspoon ground pepper
  • 2 egg whites
  • 1 lb. chicken tenders

Instructions

Preheat oven to 400 degrees.

Finely chop the pita chips in a mixer and add to a large bowl. Stir in the italian seasoning, salt and pepper.

In smaller bowl add egg whites.

Add the chicken one at a time to the egg whites and then roll in pita chips.

Spray a large pan with cooking spray and add chicken tenders. Cook chicken for 16-18 minutes or until golden brown.
