Hi, my name is Meagan and I’m an emotional sap to sad stories or pictures. You know those pet adoption TV ads or the feed the kids in Africa…. I cry or tear up every time. Yet for some reason I’m always drawn to them and almost seek them out. Almost like my fear of snakes and sharks, yet I watch and feed off of SHARK WEEK.

A couple months back I read the book A Fault in our Stars and watched the movie last night. I was a wreck when I read the book and knew immediately what I was getting into. My husband on the other hand had no idea about the book or movie. I MADE him sit down to watch the movie so he could at least hand me some tissues.

After watching a movie like this you need a comforting hug or meal. When I’m thinking about comfort food this baked pecan chicken dish comes to mind. Well it makes it even better when you add a nice glass of red wine to it.

Completely my opinion.

The movie and dinner might go smoother if you add the wine. Once again just sayin. This is the second go-around on this chicken recipe and I waited far too long for the second round. Luckily I’m bringing it back to you today just in case you missed it the first time.

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 22 minutes
Total Time: 27 minutes

Instructions

Preheat oven to 400 degrees F.

In a large bowl combine pecans, parsley, salt, and chili powder.  In another bowl add the egg whites.

Sprinkle chicken breasts with extra salt and place into the egg whites and coat each side and then place in pecan mixture making sure its well coated on each side.

Place all chicken breasts on a greased sheet and cook for 22-25 minutes or until cooked thoroughly.
