We just got home from a wonderful three day weekend to a friends house outside of San Antonio. The drive home on Monday was quite nerve-wrenching because we were driving thru towns with tornado warnings and trying to miss golfball size hail. When we arrived back home we basically had a large pond across from our house. We received so much rain but I am so thankful for every drop that God gave us.

Not only did I dodge tornados on the drive but I was also battling motion sickness. Within the last two weeks anytime I get in the back seat of the vehicle I immediately start to feel nauseous. This uneasiness did not stop when I exited the car rather it stayed with me on into Tuesday. All I wanted to do was sleep and I just kept telling my husband that I felt really sick. Olivia went down for a 2 hour nap and that is my usual time to whip up recipes or answer emails for the day. As soon as she went down I went down for the count as well. I’m definitely feeling better and I’m hoping that it was just a little bug.

Dinner was approaching and I’ve been wanting to make these baked corn dogs for a while. It was going to be easy and fun for our whole family. When you are not feeling good but still trying to feed your family, quick meals are in for the win.

Yield: 8 corn dogs
Prep Time: 5 minutes
Cook Time: 16 minutes
Total Time: 21 minutes

Ingredients

  • 1 8 ounce container crescent rolls
  • 4 hot dog wieners
  • 1 sandwich slice cheddar cheese
  • 1 egg white

Instructions

  1. Preheat oven to 375 degrees F.
  2. Roll out dough and separate the 8 triangles.  Cut the wieners in half and slide a stick into the center.  Cut each slice of cheese into 4 lengthwise pieces and then again in half, so you will end up with 8 pieces.
  3. Place the wiener and one slice of cheese into the wider section of each triangle.  Roll it up and set on a baking sheet.  Repeat until all 8 corn dogs are complete.
  4. Brush the top of the dough with egg white wash.
  5. Bake for 16-17 minutes.

*You can make without the skinny wooden sticks*
